2018 Cookbook Challenge: January Update

The cookbook I used the most in January turned out to be the same one I referenced in my last post, The Pampered Chef: It’s Good for You.

The recipes we enjoyed most from this book were:

Turkey Vegetable Cobbler

I ended up using ground turkey instead of diced turkey as the recipe recommended because that’s what I had on hand. It turned out great (Mark’s favorite of the bunch), but I can see how the diced turkey would make it even better.

Quick Curried Chicken

Chopped peanuts and pineapple sealed the deal on making this one my favorite. I added a bit too much coconut milk by mistake so I had to add a lot more of the spices to compensate. Next time, I will measure more carefully!

Grilled Vegetable Pasta Salad

It’s been subzero temps here, so I sautéed the veggies instead of going outside to grill them. This would make a fabulous side dish served at room temp or cold for a summer cookout.

So far, I haven’t missed scouring the internet for recipes like I thought I might. Of course it’s only been one month though. 😉

    I haven’t tried any recipes from a cookbook lately. I feel inspired to dig through my cabinet and unearth one of them and see what goodness I can find. 🙂
