2018 Cookbook Challenge: February Update

I did a terrible job referencing my cookbooks this month — meaning I cracked one cookbook open once. I used my trusty Joy of Cooking book to find and share the icing recipe I use with a family member.

This is the royal icing recipe I use on my cut out sugar cookies. Ignore my super dry skin. #winter

I’m happy (or maybe I should be embarrassed???) to report I didn’t use any recipes from the internet though!

Any meals I cooked were created from memory. This was easy because we ate like toddlers all month. Lots of macaroni and cheese and cheese pizza, with an occasional trip to Moe’s. Every Friday we’ve been hitting up the fish fry at our parish to try to meet more people in our community.

Here’s hoping I use some of those cookbooks and make healthier meals in March! ☘ We’re already off to a better start. Tonight we had veggie burgers with sides of green beans and grapes.
