2018 Cookbook Challenge: May & June Update

Combining May & June because we’ve been eating a lot of the same things lately. When it’s nice outside, we’re on the go a lot more, so I rely on simple recipes. I’ve been playing fast and loose with the actual recipes, so you’ll notice lots of changes between the recipes below and what we’re actually eating.

One of my favorite things about summer is tomatoes are in season! I’ve been taking advantage of that as much as possible, without overloading recipes with them because Mark is not a fan. This tomato salad recipe is the foundation for one of my favorite pasta salads.

Now for the modifications:

  • Instead of fresh basil, olive oil, sugar, and balsamic vinegar, I used this awesome pesto sauce from Costco. (But now that my garden has started growing, I have a ton of fresh basil to use!)
  • I served this with tri-color rotini to make it a more substantial/filling side dish at several events we hosted.

It’s from the, “Taste of Heaven” cookbook I received as a gift from one of my Stepdad’s cousins for our wedding.

In June, I was on a homemade burrito bowl kick. Trying to keep us from hitting up Moe’s or Chipotle too much! It was a variation of a typical burrito recipe, the one below found in my Joy of Cooking cookbook.

Modifications:

  • We ditched the tortillas and served the burrito mixture over brown rice.
  • Instead of refried beans, I used black beans.
  • We didn’t use any sour cream or jalapeños and I’m pretty sure I doubled the salsa.

Are these even the same recipes anymore with all these changes? 😂 What have been your favorite recipes from this month?
