2018 Cookbook Challenge: September Update

First, I have to admit to you I looked up a recipe on the internet this month. 😬 I needed to know the ingredients for a spice cake I’d heard about years ago and caved. It’s the only time in 9 months I’ve used a non-cookbook recipe. This challenge is about progress, not perfection, so I’m letting that slip up go and getting back to it! 😆

My favorite recipe in September was the main dish at my Annual Scarf Exchange Party — vegetarian chili from my trusty Joy of Cooking cookbook. I’m starting to wonder why I even own other cookbooks since this is so clearly my go-to. I may need to do another purge when this challenge wraps up.

The final recipe is yet again a Frankenstein of the original.

Modifications

Added:

  • 1 zucchini
  • 1 yellow squash
  • 1.5 cups of cubed butternut squash
  • 3/4 container of vegetable juice (instead of 1 cup tomato juice)

I omitted all spices the recipe called for and used 2 packets of this chili seasoning instead.

I roasted all of the harder veggies in olive oil in the oven before incorporating them into the chili. Once everything was mixed together, I simmered it on low for about 45 minutes. Cooking it the night before the party (letting it cool, refrigerating it, and then reheating it the next evening) gave the seasoning a chance to develop more fully.

My 12 year old sister who is not typically a fan of vegetables ate more than one serving!
